Simple Salmon Grain Bowl

This recipe came to me when I was short on both ingredients and time- and it turned out fabulous! Something I highly recommend for all the salmon lovers out there- invest in a big bag of wild Alaskan frozen salmon fillets. SO much cheaper than buying only a few and then you have it accessible in a pinch! I got an entire bag for $30 at Costco that includes 6-7 fillets (contents measured in ounces, not fillet count). I actually also purchased organic roasted beets there as well that were great to have on hand, instead of taking the time to roast them myself. I make my quinoa in a big batch on the weekend and have it ready to go also! All that being said, grilling salmon in a pan is so quick and then throwing everything in a bowl is quick, satisfying and who can beat that paired with tasty! Makes 1 bowl

1 salmon fillet (wild caught is always best for you and the planet)

2 cups cooked quinoa

2 cups baby mixed greens salad mix

1 roasted beet, chopped

Pinch of dried dill

Juice of 1/2 lemon

Salt & pepper to taste

For garnish: roasted sunflower seeds & hemp seeds

Optional: add avocado

  • Heat a small skillet with a thin layer of olive oil over medium heat for about 1-2 minutes.

  • Meanwhile, rinse and pat salmon dry and add dill and salt and pepper to pink side.

  • Place salmon pink side down in skillet, add lemon juice, and cover, cooking for about 5 minutes, checking salmon for browning. When it’s reached a desirable amount of grilling on this side, flip over and cook until cooked through, keeping the lid on to preserve moisture. You can turn the heat down a bit if the outside is cooking too fast, but the inside is not yet done.

  • In a shallow bowl for eating in, add in your quinoa to half the bowl (like a semi-circle), and then fill the remaining half of the bowl with mixed greens.

  • Add dressing to mixed green and toss slightly.

  • Top with cooked salmon fillet, chopped beets, sunflower seeds, hemp seeds and a bit more dressing. Add a sliced avocado, if desired. Salt and pepper to taste.
