Curried Lettuce Cups

One of my favorite healthy and quick recipes, that’s so unique and packed with flavor! I love curry seasoning, but what I love even more is a meal that fills me up without weighing me down. This one does just that! Prettier picture coming soon :)

Curried Lettuce Cups

1 lb organic ground turkey (or 2 cans garbanzo beans)

1 head of butter lettuce

1 head or package of cauliflower rice

3-4 garlic cloves, chopped

1/2 large yellow onion, chopped

2-3 carrots, chopped

3 celery stalks, chopped

1/4 cup loose packed chopped cilantro

1 Tbs coconut oil

2 1/2 teaspoons of garlic powder

2 1/2 teaspoons of onion powder

2 teaspoons of turmeric

3 teaspoons of yellow curry powder (find it in the spices section)

1 teaspoon of ground coriander

approx. 1 teaspoon salt (to taste)

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika (optional)

2 cups of cooked quinoa

coconut aminos to taste

+ extra cilantro springs to add on top of lettuce cups before folding to eat.

  • Heat coconut oil in large skillet.

  • Add in all veggies (save cilantro) and cook a few minutes until onions are translucent.

  • Add in turkey meat (or garbanzo beans) and spices, and cook until cooked/heated through.

  • Add in cauliflower rice and chopped cilantro, and cook until just tender (don't overcook cauliflower rice).

  • Taste and adjust spices accordingly. Let filling cool slightly (~5 mins out of the pan).

  • To assemble, add in quinoa, then turkey mixture, and coconut aminos and cilantro on top. Hold like a taco and ENJOY!
